sopa creme de cebola, curtege e louro

ontem saí pela primeira vez de casa. além de sair para ir ao hospital, saí também para ir à livraria tomar um café. um passeio pequeno e simples, mas soube-me pela vida. levar os livros todos para a mesa. devorá-los. passar um bom bocado. comprar o livro buttoned-up da fantastic magazine, para me entreter. regressar a casa.

esta sopa é simples. para aproveitar o melhor do que sai de época, curgetes. o melhor que da época, cebolas (que as há todo ano, sendo que agora é o seu auge). e as folhas de louro, que aprendi no almoço no OX. a receita original era com batata, mas assim é ainda melhor.

ingredientes:
1 kg de cebolas
700/800 gr de curgetes
3 folhas de louro.
água q.b. (cerca de 1,4 litros)
sal
2 c. sopa de azeite

Primeiro, preparar as cebolas, descascar e cortar em quartos. Segundo, as curgetes, descascar, cortar ao meio e depois em quartos.
Numa panela, juntar as cebolas, as curgetes e as folhas de louro e deitar água suficiente até cobrir os legumes. Adicione sal, a gosto.
Levar ao lume, deixar levantar fervura e depois cozer durante 30 minutos.
No final, juntar o azeite, retirar as folhas de louro e triturar com a varinha mágica até obter um creme.

yesterday got out of the house for the first time. first to the hospital, second to the bookshop to grab a coffee. a simple and short walk, but damn was good. grab some books. read them. enjoying time. bought buttoned-up by fantastic man magazine, just to entertain me. got back home.

this soup is simple. to enjoy the end of this season, courgettes. the best of the season coming, onions (which we use all year long anyway, but now they are at their peak). and bay leaves, that i learnt at OX lunch. the original recipe is with potatoes, but this version is even better.

ingredients:
1 kg onions
700/800 g courgettes
3 bay leaves
water (around 1,4 liters)
sea salt
2 tbsp. extra virgin olive oil

First, prepare the onions, peeling and cutting into cubes. Second, the courgettes, peeling, cutting in half and then cutting also into cubes.
On a large saucepan, put the onions, the courgettes, the bay leaves and add enough water to cover the ingredients. Add some salt, to taste.
Bring to the boil and simmer for 30 minutes [until the vegetables are soft].
At the end put the extra virgin olive oil, take the bay leaves and grind the soup with a hand blender until it is creamy and smooth.
